We Filipinos love hotdogs. We love it so much we try to incorporate it as much as we could in some of our dishes. Some put it in their afritada, menudo or spaghetti. Yes, Filipino spaghetti is well known for its sweetness and hotdogs.
I grew up eating this kind of spaghetti. I still like it but I have since acquired a different taste for my spaghetti. Our family’s favorite way of eating spaghetti is with Italian sausage and marinara sauce.
This recipe uses Italian sausage instead of ground beef. Personally, I like to use Italian sausage because it has been seasoned and is more flavorful.
Ingredients
- 1 package (500g) spaghetti
- 2 pieces mild Italian sausages, casings removed
- 1 tablespoon olive oil
- Shredded parmesan cheese
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (796 ml) whole tomatoes
- 2 tablespoons tomato paste
- ½ teaspoon salt
- ¼ freshly ground pepper
- 2 tablespoon chopped fresh basil
Instructions
- In a skillet, heat 1 tablespoon olive oil. Add the sausages, stirring and breaking up the pieces into chunks. Cook until meat is brown. Drain and set aside.
- In a saucepan, heat 1 tablespoon of olive oil. Add onion and cook until soft.
- Stir in garlic, cook for a minute. Stir in tomatoes with juice, tomato paste, salt and pepper. Bring to a boil, stirring and breaking up tomatoes. Reduce heat and cook for 15 minutes, stirring occasionally.
- Stir in browned sausage meat and cook for couple of minutes. Add basil, cover and remove from heat.
- While sauce is simmering, cook spaghetti in salted boiling water until tender but firm. Drain in a colander and toss with 1 tablespoon oil to prevent sticking.
- To serve, in a large bowl, toss hot pasta with sauce and sprinkle with parmesan cheese.
- Enjoy!
