Stroganoff Meatballs

Ingredients
Meatballs
  • 2 lbs. lean ground beef
  • 1 ½ cups bread crumbs
  • ¼ cup milk
  • ¼ cup finely chopped onion
  • 2 eggs, beaten
  • 1 teaspoon salt
  • ½ teaspoon pepper
Sour-cream sauce
  • 1 cup chopped onion
  • ¼ cup butter
  • ¼ cup all purpose flour
  • ¼ cup ketchup
  • 2-10 oz. cans consommé (undiluted)
  • 2 cups fat-free sour cream
Instructions
  1. Combine all meatball ingredients in a large bowl.
  2. Mix well and roll in balls of desired size.
  3. Place on edged cookie sheet and bake at 375°F for 25-30 minutes.
  4. Remove from oven, drain and set aside.
  5. To make the sauce, melt butter in a pan. Add onion and cook until browned.
  6. Add the flour and mix well.
  7. Add ketchup and consommé, cooking slowly until thickened.
  8. Add sour cream, then meatballs.
  9. Serve over broad egg noodles or rice.
  10. Enjoy!
