Blueberry Coffee Cake

Serves: 9 servings
  • 2 cups all purpose flour, sifted
  • 1 ½ cup sugar
  • ⅔ cup butter, cut into small pieces
  • 2 teaspoon baking powder
  • 1 teaspoon salt
  • 2 eggs, separated
  • 1 cup milk
  • 1 teaspoon vanilla
  • 1 cup blueberry
  1. Preheat oven to 350°F.
  2. Combine flour and sugar. Using a fork, cut in butter into the flour mixture until crumbly. Reserve ¾ cup for topping.
  3. To the remaining mixture, add baking powder, salt, egg yolk (unbeaten), milk and vanilla. Beat with a mixer on low for 3 minutes.
  4. Beat 2 egg whites and gently fold into the batter.
  5. Pour mixture into a greased 9X13 pan.
  6. Arrange blueberries on top. Sprinkle with reserve topping.
  7. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  8. Serve and enjoy!
