Stir Fried Pork

Ingredients
  • 1 (1 lb) pork tenderloin, trimmed, halved lengthwise, and sliced thinly
  • ⅓ cup hoisin sauce
  • ⅓ cup water
  • 2 tablespoons soy sauce
  • ½ teaspoon crushed red pepper flakes
  • 4 tablespoons vegetable oil
  • 1 lb fresh shitake mushrooms, stemmed and sliced thinly
  • 8 oz snow peas, strings removed
  • 4 garlic cloves, minced
  • 1 tablespoon grated fresh ginger
  • 3 oz (3 cups) baby spinach
Instructions
  1. Combine hoisin sauce, water, soy sauce and pepper flakes in a bowl. Set aside.
  2. Heat 1 tablespoon oil in a 12-inch skillet over medium-high heat. Pat pork dry with paper towels. Add half of the pork to skillet and cook until no longer pink, about 2 minutes. Transfer to a plate. Repeat with 1 tablespoon oil and remaining pork.
  3. Using the same skillet, add remaining 2 tablespoons oil and mushrooms. Stir and cook until mushrooms are just tender, about 3 minutes. Add snow peas and cook, stirring frequently for another 3 minutes.
  4. Clear center of skillet, add garlic and ginger, cook for 30 seconds and stir mixture into vegetables. Add pork and spinach to skillet. Whisk hoisin mixture to reconstitute, and then add to skillet and cook, stirring constantly, until spinach wilts and sauce thickens, about 1 minute.
  5. Serve and enjoy!
