Greek Style Potatoes

Ingredients
  • 2 lbs little potatoes, whole or cut in halves, depending on the size
  • 1 cup water
  • ½ cup lemon juice
  • ⅓ cup olive oil
  • 2 teaspoons dried oregano
  • Salt and pepper
Instructions
  1. Preheat oven to 350°F.
  2. Whisk lemon juice, olive oil, water and oregano in a small bowl to blend.
  3. Toss potatoes with vinaigrette in a roasting pan.
  4. Season potatoes with salt and pepper.
  5. Cover pan with foil and roast potatoes for 1 hour. Uncover and continue roasting for another 30 minutes or until fork tender and golden brown, stirring occasionally.
  6. Serve and enjoy!
