3 ½ lbs bone-in, skin on chicken thighs or your favorite chicken parts
½ cup olive oil
Juice and peels of 2 medium lemons
1 tablespoon oregano
1 teaspoon onion powder
1 teaspoon garlic powder
Salt and pepper
Instructions
Preheat oven to 350°F.
Sprinkle chicken pieces with salt and pepper and place in a roasting pan, skin side up. Sprinkle the lemon juice over the chicken and then scatter lemon peels in the pan with the chicken. Sprinkle oregano, onion and garlic powder evenly over the chicken. Drizzle olive oil over the chicken pieces.
Bake uncovered for 1 ½ hours or until the chickens are cooked through.
Serve with rice or potatoes.
