Bourbon Chicken

Ingredients
  • 2 lbs boneless skinless chicken breasts, cut into bite-size pieces
  • 2 tablespoons olive oil
Sauce
  • 1 clove garlic, chopped
  • ½ teaspoon grated ginger
  • ½ teaspoon crushed red pepper flakes
  • ¼ cup apple juice
  • ⅓ cup brown sugar
  • 2 tablespoons ketchup
  • 1 tablespoon cider vinegar
  • ½ cup water
  • ⅓ cup soy sauce
  • 1 tablespoon cornstarch
Instructions
  1. In a medium bowl, combine all the ingredients for the sauce. Set aside.
  2. Heat the oil in a 12-inch skillet over medium-high heat. Pat the chicken pieces dry with paper towels; add to the skillet and cook until lightly browned. Transfer to a plate.
  3. Whisk sauce mixture to reconstitute, and then add to the skillet, heating over medium heat. Add chicken and bring to a boil; reduce heat and simmer for 15 minutes, stirring occasionally. Serve over rice.
