Thai Shrimp Curry

Ingredients
  • 3 tbsp olive oil
  • 2 tbsp Thai red curry paste
  • 4 tsp brown sugar
  • 2 tsp fish sauce
  • ½ tsp red pepper flakes
  • 1 (14 oz) can coconut milk
  • 1 (4 oz) can sliced bamboo shoots, drained
  • 1 red bell pepper, seeded and cut into strips
  • 1 lb shrimp, peeled and deveined
  • 20 fresh Thai basil leaves
Instructions
  1. Heat a skillet over medium-high heat. Add oil and red curry paste. Whisk for about 30 seconds.
  2. Stir in sugar, fish sauce and red pepper flakes. Add coconut milk, continue whisking and bring to a boil.
  3. Add bamboo shoots and bell pepper; stir and cook for 3 minutes. Add shrimp and cook for another 3-4 minutes, or until the shrimps are cooked.
  4. Stir in basil and serve.
