12 oz farfalle (bow-tie pasta) or your favorite pasta
3 hot or mild Italian sausages, casings removed
1 tbsp olive oil plus more as needed
1 onion, chopped
2 small tomatoes, chopped
3 cloves garlic, minced
2 cups chopped kale or 3 cups baby kale
¼ cup shredded fresh basil leaves
½ cup grated parmesan cheese
Salt and pepper to taste
Instructions
Cook the pasta according to package directions. Drain and then set aside.
In a large skillet, heat olive oil over medium high heat. Add onion and tomatoes; cook until softened, about 3 minutes. Add garlic and cook until fragrant, about 30 seconds.
Add sausage and cook, breaking it into small pieces with a wooden spoon, until cooked through, about 5 minutes.
Add kale, stir and cook until soft. Add pasta, basil and parmesan cheese. Season with salt and pepper; add more olive oil if too dry.
Transfer to a serving plate. Sprinkle with parmesan cheese and drizzle with regular or flavored olive oil, if desired.
