Italian Sausage and Kale Pasta

Ingredients
  • 12 oz farfalle (bow-tie pasta) or your favorite pasta
  • 3 hot or mild Italian sausages, casings removed
  • 1 tbsp olive oil plus more as needed
  • 1 onion, chopped
  • 2 small tomatoes, chopped
  • 3 cloves garlic, minced
  • 2 cups chopped kale or 3 cups baby kale
  • ¼ cup shredded fresh basil leaves
  • ½ cup grated parmesan cheese
  • Salt and pepper to taste
Instructions
  1. Cook the pasta according to package directions. Drain and then set aside.
  2. In a large skillet, heat olive oil over medium high heat. Add onion and tomatoes; cook until softened, about 3 minutes. Add garlic and cook until fragrant, about 30 seconds.
  3. Add sausage and cook, breaking it into small pieces with a wooden spoon, until cooked through, about 5 minutes.
  4. Add kale, stir and cook until soft. Add pasta, basil and parmesan cheese. Season with salt and pepper; add more olive oil if too dry.
  5. Transfer to a serving plate. Sprinkle with parmesan cheese and drizzle with regular or flavored olive oil, if desired.
  6. Serve and enjoy!
