Grated cheddar cheese or any other cheese of choice
Quick and easy salsa
4 large ripe tomatoes, diced finely
ΒΌ red onion, diced finely
Bunch of coriander, finely chopped
Juice of half a lime
Sea salt and freshly ground pepper to taste
Instructions
Mix the salsa ingredients together in a bowl. Set aside.
Place a large frying pan over medium heat and add the olive oil.
Add red pepper, shallot and garlic; cook until lightly browned and soft.
Add cumin and paprika and stir. Add the diced steak and cook for around 3 minutes. (It cooks quickly so be careful it doesn't dry out).
Add the tomato sauce; stir and cook for another minute. Transfer to a plate.
Warm the tortillas one at a time in the microwave for 10 seconds. Add generous spoonfuls of the steak mixture, top with grated cheese and roll into wrap.
