Steak Burritos

Ingredients
Beef burritos
  • 1 lb sirloin steak, diced
  • 2 tbsp olive oil
  • 1 red bell pepper, diced
  • 1 shallot, diced
  • 1 clove of garlic, grated
  • 1 tsp cumin
  • 1 tsp paprika
  • 2 tsp tomato sauce
  • 4 tortillas
  • Grated cheddar cheese or any other cheese of choice
Quick and easy salsa
  • 4 large ripe tomatoes, diced finely
  • ΒΌ red onion, diced finely
  • Bunch of coriander, finely chopped
  • Juice of half a lime
  • Sea salt and freshly ground pepper to taste
Instructions
  1. Mix the salsa ingredients together in a bowl. Set aside.
  2. Place a large frying pan over medium heat and add the olive oil.
  3. Add red pepper, shallot and garlic; cook until lightly browned and soft.
  4. Add cumin and paprika and stir. Add the diced steak and cook for around 3 minutes. (It cooks quickly so be careful it doesn't dry out).
  5. Add the tomato sauce; stir and cook for another minute. Transfer to a plate.
  6. Warm the tortillas one at a time in the microwave for 10 seconds. Add generous spoonfuls of the steak mixture, top with grated cheese and roll into wrap.
  7. Serve with guacamole and homemade salsa.
  8. Enjoy!
