Cabbage Soup

Serves: 8 servings
  • 3 tbsp olive oil
  • 1 onion chopped
  • 2 sticks celery, chopped
  • 2 cloves garlic, chopped
  • 8 cups chicken broth
  • Salt and freshly ground pepper to taste
  • 1 cup chopped carrots
  • ½ large or 1 small cabbage, cored and coarsely chopped
  • 1 (14 oz) can diced tomatoes
  • Chopped fresh parsley
  1. In a large stockpot, heat olive oil over medium heat. Stir in onion, celery and garlic; cook until onion is soft, about 5 minutes.
  2. Add chicken broth, salt and pepper to taste. Bring to a boil, stir in carrots and cabbage. Simmer until cabbage wilts, about 10 minutes.
  3. Stir in tomatoes. Return to a boil; simmer for 15 to 30 minutes, stirring often.
  4. Serve with chopped parsley.
