Filipino Purple Yam Dessert (Halayang Ube)

Serves: 6 (7 oz) ramekins
  • 1 (16 oz) package frozen grated purple yam, thawed
  • 2 cups coconut milk
  • 2 cups evaporated milk
  • 1 cup sugar
  • 1 tsp vanilla extract (optional)
  • Macapuno strings (coconut sport strings), optional
  1. In a pot, combine coconut milk, evaporated milk, sugar and vanilla, if using. Bring to a boil, stirring until sugar has dissolved.
  2. Add the grated purple yam, stirring constantly for 30 minutes or until mixture is thick and sticky.
  3. Transfer mixture in a greased container and cool completely.
  4. Top with macapuno strings, if using and serve.
