Strawberry Arugula Salad

Ingredients
  • 4-6 handfuls of arugula
  • 2 cups sliced strawberries
  • ½ cup pine nuts
Fennel Balsamic Dressing:
  • ¼ cup extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • ½ tsp honey
  • ½ tsp Dijon mustard
  • ¼ tsp ground fennel seed
  • Sea salt and freshly ground pepper
Instructions
  1. In a large bowl, whisk together olive oil, balsamic vinegar, honey, mustard and ground fennel seed. Season with salt and pepper, to taste.
  2. Add arugula, strawberries and nuts. Gently stir until well combined. Serve on its own or as a side dish with your favorite meat.
