Banana Macadamia Nut Bread

Ingredients
  • 1⁄2 cup unsalted butter, softened
  • ¾ cup light brown sugar (I used coconut palm sugar)
  • 1 3⁄4 cups flour
  • 1 tsp baking powder
  • 1⁄2 tsp salt
  • 3 medium bananas, mashed
  • 2 eggs, beaten
  • 3⁄4 cup macadamia nuts, roughly chopped
Instructions
  1. Preheat oven to 350 degrees F.
  2. Grease and flour a loaf pan.
  3. In a bowl, mix together butter and sugar until creamy.
  4. In a separate bowl, whisk together flour, baking powder and salt.
  5. Blend dry ingredients with creamed butter/sugar mixture.
  6. Add mashed bananas, eggs and nuts.
  7. Pour into loaf pan. Bake for 55-60 minutes or until a knife comes out clean.
  8. Cool bread in pan for 10 minutes, remove from pan to wire rack. Cool completely before slicing.
