Honey Mustard Salmon

Serves: 4 servings
- ½ cup mayonnaise (I used the olive oil one)
- 2 tbsp Dijon mustard
- 2 green onions, chopped
- 1 tbsp honey
- 1 tsp apple cider vinegar
- ⅛ tsp ground black pepper
- 1 pinch salt
- 4 salmon fillets
- Preheat oven to 375 degrees F. Line a baking sheet with foil and grease with vegetable oil.
- In a medium bowl, combine all ingredients except salmon. Reserve ⅓ of mayonnaise mixture.
- Spread remaining mayonnaise mixture evenly over salmon fillets. Bake for 20-25 minutes or until salmon flakes with fork.
- Serve salmon with reserved mayonnaise mixture and garnish, if desired, with additional chopped green onions.
