Cheddar Apple Muffins

Ingredients
  • 3 cups all-purpose flour
  • ⅔ cup sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 cups grated cheddar cheese
  • 2 eggs
  • 1 cup apple juice
  • ½ cup unsalted butter or margarine, melted
  • 2 cups peeled, cored, finely chopped apples
Instructions
  1. Preheat oven to 375°F.
  2. Combine flour, sugar, baking powder, salt and cinnamon in a large bowl. Mix in cheese. Set aside.
  3. In a medium bowl, beat in eggs. Add apple juice; stir in butter and apples. Add all at once to flour mixture. Stir just until moistened.
  4. Fill greased muffin tins. Bake for 25-30 minutes.
  5. Let the muffins cool before removing from tins.
  6. Serve and enjoy!
