Easy Italian Bean Stew

- 375 g Italian style turkey sausage casings removed
- 1 small onion chopped
- 1 tbsp olive oil
- 1 can (28 oz) diced tomatoes
- 1 can (540 ml) cannellini beans (white kidney beans), drained and rinsed
- 1 cup chicken broth or water
- Salt and freshly ground black pepper
- 4 cups fresh baby spinach
In a Dutch oven, heat oil over medium heat. Add sausage and onion; cook until liquid from meat has evaporated and meat is browned, about 8-10 minutes.
Add tomatoes (with juice), beans and broth. Season with salt and pepper.
Stir well and bring to a simmer. Continue to simmer for 15 minutes. Stir in spinach and cook until just wilted.
