Bicol express is a spicy Filipino stew consisting of bite sized pieces of pork with chilies, coconut milk, shrimp paste, onions, tomato and garlic. The dish is named after the train in the Bicol region of the Philippines, known for its spicy food.

Ingredients
2tbspoil,divided
3clovesgarlic,minced
1onion,diced
1tomato,diced
2lbspork belly, pork shoulder or pork roast,cut into bite-sized pieces
1can(400 mL) coconut milk
6green or red Thai chillies,minced
1tbspsauteed shrimp paste(can substitute with fish sauce or soy sauce)
Instructions
Heat 1 tbsp of oil in a large skillet over medium-high heat. Add the garlic and saute for about 30 seconds.
Add the tomato and the onions. Continue to saute until the onion is translucent.
Add the remaining 1 tbsp of oil. Add the pork and saute until the pork is lightly browned.
Add the coconut milk. Bring to a boil. Lower the heat to medium and simmer for 15 minutes.
Add the Thai chilies and simmer for 5 minutes more.
Remove from the heat and add the shrimp paste (or soy sauce / fish sauce)
Serve hot over steamed rice. Enjoy!
