Easy Tomato Basil Sauce

Ingredients

  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 2 cloves garlic chopped
  • 2 lbs ripe fresh tomatoes cored, halved and roughly chopped
  • 1 tbsp balsamic vinegar
  • Kosher salt and freshly ground pepper to taste
  • A bunch of fresh basil leaves roughly chopped

Instructions

  • Heat saucepan over medium heat. Add olive oil and onion; cook for 5 minutes or until onion has softened.
  • Stir in garlic and cook for a minute. Add the tomatoes and the vinegar; stir to combine.
  • Season the tomato mixture with salt and pepper; cook for 15 minutes, stirring occasionally.
  • Stir in chopped basil, reduce heat to low and then continue cooking for another 5 minutes. Serve with your favorite pasta.
