1 tbsp olive oil 1 medium onion chopped 2 cloves garlic chopped 2 lbs ripe fresh tomatoes cored, halved and roughly chopped 1 tbsp balsamic vinegar Kosher salt and freshly ground pepper to taste A bunch of fresh basil leaves roughly chopped
Heat saucepan over medium heat. Add olive oil and onion; cook for 5 minutes or until onion has softened.
Stir in garlic and cook for a minute. Add the tomatoes and the vinegar; stir to combine.
Season the tomato mixture with salt and pepper; cook for 15 minutes, stirring occasionally.
Stir in chopped basil, reduce heat to low and then continue cooking for another 5 minutes. Serve with your favorite pasta.
