Ingredients

  • 2 lbs salmon fillet
  • 2 tbsp extra virgin olive oil
  • 1 tsp lemon zest
  • 2 tbsp lemon juice
  • 2 cloves garlic finely chopped
  • 1 tsp salt
  • ½ tsp fresh dill
  • ½ tsp dried oregano
  • ½ tsp paprika

Instructions

  • In a shallow casserole dish, whisk together the oil, lemon zest and juice, garlic, salt, dill, oregano and paprika. Add the salmon and coat with the marinade; cover with plastic wrap and let marinate in the fridge for half an hour.
  • Preheat oven to 400 °F. Line a baking sheet with foil.
  • Transfer salmon plus marinade on the prepared sheet. Bake for 15-20 minutes or until fish flakes easily with a fork.
  • Serve with tzatsiki and salad.
