Ingredients
2 1/4cupsall-purpose flour
½tspbaking soda
¼tspsalt
1cuplight brown sugarfirmly packed
1/2cupwhite sugar
3/4cupsalted buttersoftened
2large eggs
2tsppure vanilla extract
1cuppecanschopped
1 ½cup8oz white chocolate bar, coarsely chopped
Instructions
Preheat oven to 300°F.
In medium bowl, combine flour, baking soda and salt. Mix well with a whisk. Set aside.
In large bowl with an electric mixer, blend sugars at medium speed. Add butter and mix to form a grainy pate, scraping down the sides of the bowl. Add eggs and vanilla, and beat at medium speed until light and fluffy.
Add the flour mixture, pecans and white chocolate, and blend at low speed until just combined. Do not over mix.
Drop by rounded tablespoons onto ungreased cookie sheets, 2 inches apart. Bake 20-22 minutes or until edges just begin to turn golden brown. Using a spatula, transfer cookies immediately to a cool flat surface.
