Ingredients
2lbscod fillet
Kosher salt and freshly ground black pepper
1tbsplemon juice
1tbspLemon zest
1/4cupmayonnaise
1tspDijon mustard
¼chopped fresh Italian parsley
1cupPanko breadcrumbs
Instructions
Preheat oven to 350 degree F. Line a baking sheet with parchment paper.
Place the cod on the baking sheet and season with a sprinkle of salt and black pepper.
In a bowl, combine together the lemon juice and zest, mayonnaise, Dijon mustard and chopped parsley. Mix until well combined. Spread mayonnaise mixture evenly over the cod. Sprinkle top with the breadcrumbs. Bake in the oven for 15 minutes or until fish flakes easily with a fork.
