375gItalian style turkey sausagecasings removed
1small onionchopped
1tbspolive oil
1can(28 oz) diced tomatoes
1can(540 ml) cannellini beans (white kidney beans), drained and rinsed
1cupchicken broth or water
Salt and freshly ground black pepper
4cupsfresh baby spinach
Instructions
In a Dutch oven, heat oil over medium heat. Add sausage and onion; cook until liquid from meat has evaporated and meat is browned, about 8-10 minutes.
Add tomatoes (with juice), beans and broth. Season with salt and pepper.
Stir well and bring to a simmer. Continue to simmer for 15 minutes. Stir in spinach and cook until just wilted.
