  • 12 oz farfalle bow-tie pasta or your favorite pasta
  • 3 hot or mild Italian sausages casings removed
  • 1 tbsp olive oil plus more as needed
  • 1 onion chopped
  • 2 small tomatoes chopped
  • 3 cloves garlic minced
  • 2 cups chopped kale or 3 cups baby kale
  • 1/4 cup shredded fresh basil leaves
  • ½ cup grated parmesan cheese
  • Salt and pepper to taste

  • Add sausage and cook, breaking it into small pieces with a wooden spoon, until cooked through, about 5 minutes.
  • Add kale, stir and cook until soft. Add pasta, basil and parmesan cheese. Season with salt and pepper; add more olive oil if too dry.
