Steak Burritos

Juicy sirloin steak seared with sweet bell pepper and spices, all wrapped in warm tortillas and topped with melty cheese. It’s a flavor-packed meal that’s super easy to whip up!

Ingredients

Beef burritos

  • 1 lb sirloin steak diced
  • 2 tbsp olive oil
  • 1 red bell pepper diced
  • 1 shallot diced
  • 1 clove of garlic grated
  • 1 tsp cumin
  • 1 tsp paprika
  • 2 tsp tomato sauce
  • 4 tortillas
  • Grated cheddar cheese or any other cheese of choice

Quick and easy salsa

  • 4 large ripe tomatoes diced finely
  • ¼ red onion diced finely
  • Bunch of coriander finely chopped
  • Juice of half a lime
  • Sea salt and freshly ground pepper to taste

Instructions

  • Mix the salsa ingredients together in a bowl. Set aside.
  • Place a large frying pan over medium heat and add the olive oil.
  • Add red pepper, shallot and garlic; cook until lightly browned and soft.
  • Add cumin and paprika and stir. Add the diced steak and cook for around 3 minutes. (It cooks quickly so be careful it doesn't dry out).
  • Add the tomato sauce; stir and cook for another minute. Transfer to a plate.
  • Warm the tortillas one at a time in the microwave for 10 seconds. Add generous spoonfuls of the steak mixture, top with grated cheese and roll into wrap.
  • Serve with guacamole and homemade salsa.
  • Enjoy!
