I found this casserole dish on pinterest and it caught my attention because it was a simplified recipe of the classic chicken cordon bleu. Chicken cordon bleu is originally made by wrapping pounded chicken breast meat around Swiss cheese and ham. The chicken is then breaded, pan fried and served with a creamy sauce. This recipe made it easy by using shredded rotisserie chicken meat and layering them in a casserole dish with the ham, cheese, the sauce and topping them with the breadcrumbs, butter and parmesan mixture. It was then baked and it came out yummy and gooey. It taste the same as the chicken cordon bleu that I always enjoy at my favorite restaurant.
- 1 large rotisserie chicken, meat removed and pulled (about 5-6 cups)
- ½ lb sliced deli-style black forest ham, chopped
- ½ lb sliced Swiss cheese
- 4 tbsp butter
- 4 tbsp flour
- 3 cups milk
- 2 tbsp lemon juice
- 1 tbsp Dijon mustard
- 1 ½ tsp salt
- ½ tsp paprika
- ½ tsp pepper
- 4 tbsp melted butter
- 1 ¼ cups seasoned bread crumbs
- ¼ cups Parmesan cheese
- Preheat oven to 350°F. Grease a 9X13 inch casserole dish.
- Layer the chicken in the bottom of the dish followed by the ham and finally the Swiss cheese.
- In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute. Slowly add the milk, whisking to keep clumps from forming. Turn the heat to high and cook until the sauce thickens and boils completely, whisking often. Remove from the heat and add the remaining sauce ingredients. Pour the finished sauce over the chicken-ham-cheese layer in the dish.
- In a small bowl, mix together the topping ingredients until the butter is evenly distributed over the crumbs. Sprinkle over the top of the dish and bake for 45 minutes. Cool for 10 minutes before serving.
