Chocolate Lazy Cake

Chocolate Lazy Cake This refrigerated cake is the easiest cake I have ever made. There are only five ingredients and it does not require any baking. I found this recipe online when my cousin who lives in England shared it on Facebook. I found out later that there are two versions of this cake. There’s one which has eggs and vanilla extract added to its ingredients and which requires stovetop cooking. I opted for this recipe where it only requires mixing the ingredients together and then freezing it for at least two hours. My family loves this wonderful cake. It is the perfect treat; it is not too sweet and yet enjoyable and very satisfying. Indulge!

Serves: 12 slices
Ingredients
  • 30 regular digestive biscuits, coarsely crushed
  • ½ cup unsalted butter, melted
  • 6 tbsp icing sugar
  • 6 tbsp unsweetened dark cocoa
  • ½ cup sweetened condensed milk
Instructions
  1. In a large bowl, combine condensed milk, sugar, melted butter and cocoa; whisk until smooth. Add biscuits and mix until well combined.
  2. Transfer mixture into 9 X5 loaf pan that has been lined with plastic wrap. Using the back of a spoon, press well to take the shape of the pan. Make sure all corners have been fully filled. Cover and freeze for at least 2 hours or overnight.
  3. To serve, dip sharp knife in hot water and slice.

    Hi there, I make something similar to this a lot, but just melt dark chocolate to hold everything together. I also add chopped nuts (any kind) and dried fruit (craisins, chopped apricots). The dried fruit makes it chewy. You can make it gluten free by using gluten-free cookies – I often keep a bag of those on hand so I can easily whip these up for when GF friends come by. AND, I make them individual sized in a lined mini muffin tin. Like I said, similar!!

    Is it possible to adapt this recipe to use Nutella rather than the chocolate mixture?

      Hi Angela,
      I was looking at the ingredients of Nutella and some of which are sugar, cocoa and skim milk. The chocolate mixture on the other hand consists of condensed milk,sugar, butter and cocoa. So I am not sure if it will work but you could give it a try. Start with a small amount of digestive biscuits and nutella first and see if they will adhere after freezing. Otherwise you might need to add equal amounts of butter and condensed milk. Hope this helps.
