Classic Greek Chicken

I was watching Diners, Dive-ins and Dives on the Food Network last week when it featured a diner which served this Greek style roasted chicken. I decided to try it because it wasn’t only a simple and easy way of cooking chicken, but it looked delicious too. It used chicken halves but I chose to use my favorite part, thighs. The chicken pieces were baked with both the juice and peels of lemons, olive oil, oregano, onion powder and garlic powder, thus giving the meat its flavorful and tangy taste. The enjoyable part is eating the crispy brown skin and of course, the moist and tasty meat. Delicious! 😀

Serves: 4-5 servings
Ingredients
  • 3 ½ lbs bone-in, skin on chicken thighs or your favorite chicken parts
  • ½ cup olive oil
  • Juice and peels of 2 medium lemons
  • 1 tablespoon oregano
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt and pepper
Instructions
  1. Preheat oven to 350°F.
  2. Sprinkle chicken pieces with salt and pepper and place in a roasting pan, skin side up. Sprinkle the lemon juice over the chicken and then scatter lemon peels in the pan with the chicken. Sprinkle oregano, onion and garlic powder evenly over the chicken. Drizzle olive oil over the chicken pieces.
  3. Bake uncovered for 1 ½ hours or until the chickens are cooked through.
  4. Serve with rice or potatoes.
  5. Enjoy!
