Lemon Soy Chicken

Lemon Soy Chicken In this lemon soy chicken recipe, the chicken pieces were marinated overnight in a mixture of lemon juice, soy sauce, oil, honey, garlic and crushed red pepper. The chicken pieces were then baked and not fried, making this dish a healthier one. The chicken was baked just enough so they were juicy and not dry. It was served with salad or if preferred with steamed rice. Simply delicious!

Serves: 4 servings
Ingredients
  • 3 tablespoons lemon juice
  • 3 tablespoons soy sauce
  • 1½ tablespoons vegetable oil
  • 2 teaspoons liquid honey
  • 2 cloves garlic, smashed
  • ¼ teaspoon crushed red pepper
  • 8 chicken drumsticks or bone-in skin-on chicken thighs
Instructions
  1. In glass measure, whisk together lemon juice, soy sauce, oil and honey; stir in garlic and crushed red pepper.
  2. Pour marinade into shallow baking dish; add chicken pieces, tossing to coat.
  3. Refrigerate, turning occasionally, for at least 4 hours or for up to 24 hours. Roast in 425°F (220°C) oven, basting 3 times, until juices run clear when chicken is pierced, about 45 minutes.
