In this lemon soy chicken recipe, the chicken pieces were marinated overnight in a mixture of lemon juice, soy sauce, oil, honey, garlic and crushed red pepper. The chicken pieces were then baked and not fried, making this dish a healthier one. The chicken was baked just enough so they were juicy and not dry. It was served with salad or if preferred with steamed rice. Simply delicious!
