Maple Cookies My son and I baked these simple maple cookies on the weekend. He just recently celebrated his 25th birthday and he got a gift tray full of baking stuff from his friends. The gift includes a non-stick baking mat which we used to bake the cookies on.  We found the recipe online and after reading some reviews, we decided to use maple extract instead of vanilla to give more maple flavor to the cookies. The cookies came out soft, chewy and plain looking. We like them simple but if you prefer, you may glaze them with some icing. Have these cookies with milk, coffee or tea. Enjoy!

Ingredients
  

  • 1 cup butter softened
  • 1 cup packed brown sugar
  • 1 egg
  • 1 cup real maple syrup
  • 2 tsp maple extract
  • 2 tsp baking soda
  • ½ tsp salt
  • 4 cups all-purpose flour
  • 1/3 cup granulated sugar optional

Instructions
 

  • Preheat oven to 350 degrees F. Line a cookie sheet with a baking mat (or grease cookie sheets).
  • In a large bowl, cream the butter and brown sugar. Add the egg, syrup and maple extract. Mix until well blended.
  • Sift together the flour, salt and baking soda. Stir into butter mixture until well blended. Shape into 1 inch balls and roll in sugar, if using. Place on cookie sheets about 2 inches apart and flatten slightly.
  • Bake 8 to 10 minutes in the preheated oven. Let cool on wire rack.
