Avocado Shake

Avocado Shake My 26 year old son who came home to visit for two weeks has left and is back in Calgary. While he was here, we went to Vancouver Island for couple of days. We spent some time together going for walks, playing board games, watching movies and TV shows and eating at restaurants. One place we went to was a Vietnamese Pho restaurant where my son ordered an avocado shake. This popular Vietnamese shake reminds me of a Filipino dessert that my siblings and I would usually have when we were growing up. The Filipino version consists of slices of avocadoes mixed with condensed milk and ice cubes. It gets better as the ice cubes melt and that is when the mixture becomes less thick and less sweet. In this recipe, you can adjust the amount of milk you add, depending on how thick or thin you want your shake to be. Either way, this shake is perfect to have on a hot summer day. Enjoy! Serves: 1-2 servings
Ingredients
  • 1 large ripe avocado, peeled, pitted and sliced
  • 1 cup ice cubes
  • ⅓ cup sweetened condensed milk
  • ¼ cup low fat milk or soy milk plus more to get preferred consistency
Instructions
  1. Place all ingredients in blender and process until mixture is smooth. If mixture is too thick, add more milk and process until desired consistency has been reached.
  2. Serve immediately.
