Baked Crispy Chicken with Honey Mustard Glaze

Baked Crispy Chicken with Honey Mustard Glaze I have been spring cleaning my freezer and realized how much frozen chicken meat I have. This probably means that my family will be eating chicken dishes for the next few days or so. What I like about this recipe is that it is easy to make and requires few ingredients. It is also baked and uses bone-in thighs, which is my favorite chicken part.

The glaze of grainy mustard and honey distinguishes this dish from other types of roast chicken. It is golden on the outside and moist inside. Delightfully delicious! Baked Crispy Chicken with Honey Mustard Glaze

Serves: 4 servings
Ingredients
  • 8 bone-in, skin-on chicken thighs
  • ½ cup olive oil
  • juice of 1 lemon
  • Coarse salt and ground pepper
  • 1 tablespoon grainy mustard
  • 1 to 2 tablespoons honey
Instructions
  1. In a bowl, toss chicken thighs with olive oil and lemon juice; season with salt and pepper and marinate 1 hour (or up to a day).
  2. Preheat oven to 375 degrees. Roast chicken, skin side down, in an oiled roasting pan, 20 to 25 minutes; flip and roast 10 more minutes.
  3. Stir together grainy mustard and honey and season with salt and pepper. Brush glaze onto chicken and broil 5-7 minutes.
  4. Serve and enjoy!
