Easy Chicken Salad Sandwich This easy chicken salad sandwich was inspired from the chicken sandwich my husband used to have when he was  young. He would go to his mom’s workplace after school and his mom would always buy him a chicken sandwich for a snack. According to him, the chicken salad sandwich was in white bread with slices of cucumber in between. The sandwich was even wrapped in wax paper.

I love using leftover rotisserie chicken meat because my family loves rotisserie chicken and there are always leftovers. I am always looking for ways to use this flavorful and versatile meat. That is why I was able I put a twist on this chicken salad by using left-over rotisserie chicken and sweet green relish.  The rest of the ingredients are the most basics in making a chicken salad. By using leftover rotisserie chicken, the meat is already seasoned, and therefore more flavorful. Furthermore, I only needed to use a very small amount of salt. This recipe is simple, easy to prepare and yet satisfyingly delicious. It is an ideal meal to have for lunch at work. Easy Chicken Salad Sandwich

Cooking Tips

When making this chicken salad sandwich, it’s all about the texture and flavor balance. If you have time, consider letting the chicken salad chill in the fridge for at least 30 minutes before serving. This allows the flavors to meld together beautifully. For a creamier texture, you can mix in a bit of Greek yogurt along with the mayonnaise. This not only adds creaminess but also gives a nice tang that complements the chicken. If you like a bit of crunch, finely chop some celery and add it in. It brings a refreshing crunch that pairs well with the soft bread. Lastly, don’t be shy with the seasoning. A sprinkle of black pepper or a dash of garlic powder can elevate the overall taste. Just make sure to taste as you go so you can adjust to your preference.

Ingredient Notes

Using leftover rotisserie chicken is a game changer for this recipe. It saves time and adds a depth of flavor that raw chicken simply can’t match. When selecting your chicken, look for one that is well-seasoned and has a nice balance of white and dark meat. If you prefer making your own chicken, poaching or baking chicken breasts works well too, just be sure to season them well. For the mayonnaise, choose a good quality brand for the best flavor. If you want a healthier option, you can substitute half of the mayo with plain yogurt. Regarding the relish, sweet green relish adds a unique sweetness that contrasts nicely with the savory chicken. If you want to change things up, try dill pickle relish for a tangy twist.

Serving Suggestions

This chicken salad sandwich is versatile and can be served in various ways. One of the simplest ways is on classic white or whole grain bread. However, for a fun twist, try serving it on croissants or in pita pockets. If you want to make it a bit more gourmet, consider toasting the bread lightly before assembling the sandwich. This adds a nice crunch. Serve it with a side of chips or a fresh salad for a complete meal. If you are hosting a gathering, you can also turn this sandwich into bite-sized sliders. Just cut smaller portions and serve on mini buns. Pair with some sliced pickles or a side of fruit for a refreshing touch. This dish is perfect for picnics or lunchboxes, making it a great choice for meal prep too.
