Two of my sons and I spent most of the day in the kitchen yesterday. Aside from making our New Year’s dinner, we baked some goodies to give away. My son made these incredible “Turtle Pretzels”, which are basically pretzels coated in caramel, chocolate and nuts.
The challenge that I faced when shopping for ingredients was finding the pretzel sticks in the supermarket. I settled for Japanese sticks instead which came in different flavours. The downside was that the sticks were very delicate and hard to handle when coating with caramel and chocolate. However, my sons ate all the broken pretzels and the flavoured pretzel sticks added another dimension to the turtle sticks.
I ended up bringing these treats to my niece’s new year’s lunch today. Everyone enjoyed these sweet treats.
- 1 package (14 oz) caramels
- 1 tbsp water
- 1 package (10 oz) pretzel rods
- 8 ounces semisweet chocolate, chopped
- 2 tsp shortening
- 1 cup finely chopped pecans
- In a double boiler, melt caramels in water. Dip half of each pretzel into the hot caramel. Place on a greased sheet of foil to cool.
- In a microwave, melt chocolate and shortening; stir until smooth. Dip the caramel-coated end of each pretzel into the chocolate, allowing excess to drip off; sprinkle with nuts. Return to foil to cool.
