Ingredient Notes
For these vanilla wafer cookies, the quality of ingredients makes a significant difference. Using pure vanilla extract, like the one from Mexico, elevates the flavor profile. Avoid imitation vanilla if possible, as it doesn’t provide the same depth of taste. When it comes to butter, use unsalted butter for better control over the sweetness and saltiness of the cookies. Make sure it’s softened at room temperature before mixing, as this helps achieve the right texture. If you’re feeling adventurous, consider adding a pinch of sea salt to the dough. This will enhance the sweetness and balance the flavors nicely. Additionally, using fresh baking powder is crucial. Old baking powder can lead to flat cookies, so a quick check can save your batch. Lastly, while all-purpose flour works perfectly, you can experiment with a mix of whole wheat flour for a nuttier flavor or almond flour for a gluten-free option. Just remember to adjust the liquid slightly if you switch flours.
Serving Suggestions
These vanilla wafer cookies are incredibly versatile and can be served in several ways. For a simple yet delightful treat, serve them plain alongside a glass of milk or a cup of tea. If you’re hosting a gathering, consider stacking them on a platter and dusting the top with powdered sugar for a touch of elegance. Another fun idea is to use them as a base for a dessert parfait. Layer crumbled cookies with whipped cream and fresh berries for a delicious twist. If you want to get creative, you can sandwich two cookies with frosting or chocolate ganache for a sweet surprise. For kids’ parties, try using colorful icing to decorate the cookies. This adds a personal touch and makes them even more appealing. Don’t hesitate to serve them warm, straight from the oven, as the aroma is irresistible. The soft texture and warm flavor will make them disappear in no time.

Can I make these cookies ahead of time?
Absolutely, you can make the dough ahead of time and refrigerate it for up to three days. Just let it sit at room temperature for a bit before baking to make it easier to scoop.
What can I add to these cookies for extra flavor?
Consider adding mini chocolate chips, chopped nuts, or even some sprinkles for a fun twist. A pinch of sea salt in the dough can also enhance the overall flavor.
What common mistakes should I avoid when making these cookies?

OK…now these look like they’re supposed to look. I just made a recipe for pasencia which is…essentially a vanilla-flavored meringue cookie. It said ‘pasencia’ but no butter, just flour and egg whites and sugar. I’m sure they will be tasty…but they won’t be ‘nilla wafers. I’ll have to try this recipe out…seems like the ‘realer deal’…
