Baked Salmon with Tomatoes, Spinach and Mushrooms

I have been cooking salmon the same way for so long.  I simply sprinkled it with seasoning salt and baked it.   My family loves salmon and they never seem to get tired of it. Often times I would make salmon fried rice with the left over salmon. My family may not get tired of the same salmon dish, but I do get tired of it. So, I have been in search for a brand new salmon recipe to try out. The last one I made was baked salmon with herbed mayo, which my family and I enjoyed so much. This past weekend, I made this simple salmon dish that is quick and so easy to make. The salmon was baked with a blend of tomatoes, spinach, mushrooms and sun-dried tomato dressing. The salmon was delicious, succulent and satisfying.  Another salmon dish that I will for sure make again. Yummy! 🙂

Cooking Tips for Perfectly Baked Salmon

To achieve perfectly baked salmon, start by preheating your oven to 400 degrees Fahrenheit. This temperature allows the salmon to cook evenly without drying out. Make sure to use a baking dish that is large enough to hold the salmon fillet without crowding. For an extra layer of flavor, consider marinating the salmon in a mixture of olive oil, lemon juice, garlic, and herbs for at least 30 minutes before baking. This not only enhances the taste but also helps keep the fish moist during cooking. When you place the salmon in the oven, check for doneness at around 12 to 15 minutes, depending on the thickness of the fillet. Salmon is done when it flakes easily with a fork and reaches an internal temperature of 145 degrees Fahrenheit. If you prefer a crispier skin, broil the salmon for the last two minutes of cooking. Keep an eye on it, as broiling can quickly turn from perfect to burnt.

Serving Suggestions for Your Salmon Dish

Baked salmon can be served in a variety of ways to elevate your meal. For a complete dinner, pair it with a side of roasted vegetables, such as asparagus or Brussels sprouts. The slight bitterness of these vegetables complements the richness of the salmon beautifully. If you want something lighter, consider a fresh salad with mixed greens, cherry tomatoes, and a lemon vinaigrette. This adds a refreshing contrast to the baked dish. Another option is to serve the salmon over a bed of quinoa or couscous, which will soak up the juices and add texture. For a little indulgence, you could drizzle some extra sun-dried tomato dressing over the top before serving. This not only adds flavor but also makes the dish visually appealing. Don’t forget a slice of lemon on the side, as a squeeze of fresh lemon juice can brighten up the flavors even more.

Storage Instructions and Meal Prep Ideas

Storing leftover baked salmon is quite simple. Allow the salmon to cool down to room temperature before transferring it to an airtight container. It will stay fresh in the refrigerator for up to three days. If you want to keep it longer, consider freezing it. Wrap the salmon tightly in plastic wrap, then place it in a freezer-safe bag. Properly stored, it can last in the freezer for up to three months. When you’re ready to enjoy it again, thaw it overnight in the fridge before reheating. For meal prep, you can portion out the salmon into individual containers with your chosen sides. This makes for a quick and healthy lunch or dinner option throughout the week. Just reheat gently in the microwave or oven to avoid overcooking. Incorporating baked salmon into your weekly meal plan can save time and provide a nutritious protein source that pairs well with various sides.

Frequently Asked Questions

Can I use frozen salmon for this recipe?

Frozen salmon works great, just make sure to thaw it completely before cooking. This helps ensure even cooking and better texture.

What vegetables can I substitute for spinach and mushrooms?

You can swap in kale or Swiss chard for the spinach, and try zucchini or bell peppers instead of mushrooms. Just keep in mind that cooking times might vary slightly depending on the veggies you choose.

How should I store leftovers?

Store any leftover salmon in an airtight container in the fridge for up to three days. Reheat gently in the oven to keep it moist, or enjoy it cold in salads.

Can I prepare this dish ahead of time?

You can prepare the veggies and dressing ahead of time, just keep them separate until you are ready to bake the salmon. This saves you time on busy nights.

What are some good sides to serve with baked salmon?

Roasted asparagus, quinoa salad, or a light citrusy salad pair really well with baked salmon. These sides complement the flavors without overpowering the dish.
