Holiday Tree Salad
Ingredients
- 3 large ripe avocados
- 2 tablespoons lemon juice
- ¼ cup crumbled feta cheese
- 1/4 orange or yellow bell pepper diced
- Grape or cherry tomatoes
- 1 bag 5oz mixed baby salad greens
Citrus vinaigrette
- 1 small grapefruit halved
- 1 orange halved
- 1 lime halved
- 1 tablespoon Dijon mustard
- ½ teaspoon salt
- Pepper
- ¼ cup avocado or olive oil
Instructions
- Cut avocados in half, remove pit and peel. Cut each avocado half lengthwise into 4-5 slices. Sprinkle the slices with lemon juice.
- On a large plate, arrange the largest avocado slices to form the branches of the tree. Scatter with cheese, diced pepper and tomatoes.
- Prepare the vinaigrette. Squeeze the juice from the grapefruit, orange and lime juice into a small bowl. Whisk in mustard, salt and pepper to taste, and avocado or olive oil.
- In a salad bowl, toss the smaller avocado slices, bell peppers,feta cheese and cherry tomatoes with baby greens and vinaigrette.
