Kale is my favorite leafy green nowadays. I have made Baked Kale Chips and used it in soups like Minestrone Soup with Bacon and Kale and Vegetable Soup with Kale and Edamame. Recently, I have been buying kale that is packaged and prepared nicely, perfect for salads. This pasta recipe is another way to make use of this healthy vegetable. It combines the taste of kale with the flavors of Italian sausage, fresh basil and Parmesan cheese. The bow-tie pasta completes this simple and hearty dish. This pasta can tastes even better with a drizzle of your favorite flavored olive oil. I enjoyed mine with a garlic flavored olive oil. Delicious!
- 12 oz farfalle (bow-tie pasta) or your favorite pasta
- 3 hot or mild Italian sausages, casings removed
- 1 tbsp olive oil plus more as needed
- 1 onion, chopped
- 2 small tomatoes, chopped
- 3 cloves garlic, minced
- 2 cups chopped kale or 3 cups baby kale
- ¼ cup shredded fresh basil leaves
- ½ cup grated parmesan cheese
- Salt and pepper to taste
- Cook the pasta according to package directions. Drain and then set aside.
- In a large skillet, heat olive oil over medium high heat. Add onion and tomatoes; cook until softened, about 3 minutes. Add garlic and cook until fragrant, about 30 seconds.
- Add sausage and cook, breaking it into small pieces with a wooden spoon, until cooked through, about 5 minutes.
- Add kale, stir and cook until soft. Add pasta, basil and parmesan cheese. Season with salt and pepper; add more olive oil if too dry.
- Transfer to a serving plate. Sprinkle with parmesan cheese and drizzle with regular or flavored olive oil, if desired.
- Serve and enjoy!
